1.21 Ore Distribution Changes
Since 1.18, world height expanded from Y=0~256 to Y=-64~320. Ores distribute across wider ranges with specific peaks. In 1.21: Diamonds peak at Y=-58, Coal at Y=96, Iron has dual peaks at Y=16 and Y=232 (mountains).
Ore generation changed completely in 1.18: instead of a fixed best layer for everything, each ore now has a triangle-shaped distribution — rare at the edges, peaked in the middle. Diamond and redstone keep getting denser as you go deeper, with the practical sweet spot around Y=-58 to -59 where you are above bedrock but below most lava.

Fortune III increases diamond drops from 1 to ~2.2 average (max 4). Silk Touch lets you collect ore blocks to mine later with Fortune. Efficiency V dramatically speeds up mining. Best combo: Fortune III + Efficiency V + Mending + Unbreaking III on a diamond pickaxe.
